Signs of Harvest Maturity
What You’ll Learn
Every crop has its own maturity signals — learn them so you never harvest too early or too late.
Harvest in the cool morning hours to keep field heat low and extend your produce's shelf life.
Handle every piece of produce gently — a bruise you cannot see now will cause rapid decay inside later.
Why Maturity Timing Matters
Pick too early and you end up with undersized, flavourless produce that gets rejected or fetches low prices. Wait too long and you have overripe, soft produce with barely any shelf life left. Knowing the maturity signs for each crop you grow is one of the most valuable skills you can develop — and it costs nothing.
Common Maturity Indicators
Tomatoes are ready when full colour has developed and the fruit gives slightly to gentle pressure. Onions are mature when their tops fall over naturally and the necks turn thin and dry. Cabbages are ready when the head feels firm and solid when you squeeze it. Each crop has its own visual, tactile, and sometimes auditory cues — pay attention and they will guide you.
Harvesting Technique
Work in the early morning when temperatures are cool and produce carries the least field heat. Use sharp, clean tools — clean cuts heal faster and resist infection better than torn stems. Lower produce gently into containers; never throw or drop it. Bruises that look invisible now trigger rapid decay inside the fruit.
